1 teaspoon garam masala.
1 teaspoon coriander powder.
1/2 teaspoon chaat masala (optional.)
Salt to taste.
2 cups water or vegetable stock.
1 cup milk (for creaminess, optional.)
200 grams pasta (penne, macaroni, or fusilli work well.)
2 tablespoons tomato ketchup.
1/4 cup grated cheese (cheddar or processed cheese.)
Fresh coriander leaves, chopped (for garnish.)
Instructions:
Heat oil in a large pot or deep pan over medium heat, add cumin seeds and let them splutter. Add garlic and sauté for 30 seconds until aromatic.
Next, add chopped onions and sauté until golden brown, add the green chilli, tomatoes, and a pinch of salt this should be cooked until the tomato turn soft and pulpy. Add the red chilli powder, garam masala, coriander powder, turmeric, and chaat masala (if available). Stir well and cook for 1–2 minutes to blend in the spices.
Now, pour in water or vegetable stock and milk (if using), cook mixture till boil, then add the pasta. Next add tomato ketchup and mix everything well. Reduce the heat to low, cover, and let the pasta simmer for 10–12 minutes.
Stir occasionally to ensure the pasta doesn’t stick to the bottom of the pan. Once the pasta is cooked and the sauce thickens, add in the grated cheese. Adjust salt and spice levels if needed.
Finally, garnish with fresh coriander leaves and a sprinkle of additional cheese if you want, serve hot with garlic bread or a side salad.
Spicy Pasta With Tomato Basil
Ingredients:
250g pasta.
1/2 cup fresh basil leaves. Fresh coriander or basil leaves for garnish.
3 cups vegetable soup (if available.) 1 tbsp olive oil (any cooking oil).
3 garlic cloves (minced), 1 small onion, thinly sliced, 1 chopped tomatoes (400g), 1 green chilli (optional), sliced, 1/2 teaspoon black pepper powder, teaspoon red chilli powder (optional for extra spice)
Salt and pepper to taste.
1/4 cup tomato ketchup or tomato paste.
Grated cheese for topping.

Fry chopped onion until they become flexible in a big pot.

Cook until Pasta is soft (firm to the bite.)
Drain the pasta and reserve 1/2 cup of the pasta water. Set aside.

Cook the Onion and Tomato, add the chopped onion to the pan and sauté until soft and golden.

Mix well and cook for 2–3 minutes, and add Basil.
Add a splash of the reserved pasta water to adjust the sauce consistency. Simmer for 2–3 minutes.
Add the cooked pasta to the pan and fry until well mixed. Stir well, so the pasta absorbs the flavours of the spicy tomato basil sauce.
Remove the pan from heat and sprinkle grated cheese (optional.) You should serve immediately, paired with garlic bread or a side salad.
